The staff were all welcoming, and explained each dish well as it was presented.
Warm and modern interior.
The food itself was absolutely delicious, in particular the sea food dishes.
My only criticism would be the first three "courses" make up the snack element of the meal. And while it is a nine course tasting menu because of this I was still a little hungry at the end.
But overall gold value for money in a Michelin dining experience and would recommend visiting.
06/01/2025: In December, my husband and I ate our first Michelin star dinner at Bastible.
The restaurant operates exclusively on a set system. The winter menu consists of nine elegant servings and costs €105 per person. The portion size is in the best fine dining traditions, but by the end of dinner we left the restaurant very full.
It all started with freshly baked sourdough bread with seeds and fermented butter. It sounds simple, but very tasty!
The already luxurious tart with oysters, fermented celery and cucumber was supplemented with black caviar.
Next was the perfect combination of marinated sea bream with horseradish, grapefruit and carrots. The slight spice, tartness of citrus fruits and the sweetness of carrots surprisingly did not distract from the fish but, on the contrary, complemented it.
I'm not a fan of scallops, much less with rutabaga, sake and chard, but in places like this you have complete trust in the chef and, as a rule, you are not disappointed.
Wild halibut fillet with shrimp and clam sauce is a delicate dish with a marine character.
The next two dishes are difficult to explain, so I had to turn to the Internet:
Custard mushroom cream with stewed short rib and soubise sauce based on onions, cream and butter;
Japanese sika deer fillet, crapaudine beets and ruby port. I don’t mind rare meat, so I was able to appreciate the dish.
Finally there were two desserts:
Caramelized apple, vanilla, praline and milk cream and quin amman with chamomile and walnut.
Cooking techniques, ingredients, service, presentation, contingent - everything corresponds to the level of the establishment. This pleasure is not cheap, but for a fundamentally new gastronomic experience and a special occasion in life it is definitely worth a visit.
For an additional 80€ per person you can order a wine accompaniment, but we don’t drink alcohol, so we didn’t take advantage of it and have nothing to say.
