Dear reader,
It's been quite some time since I gave my humble opinion on restaurants in various regions on this blog.
I have to apologize for that. It was for personal reasons and nothing to do with you. But now beautiful and familiar times will come again, when I will offer you the consultation you deserve.
Today I wandered through the streets of Galway, unfortunately without Arno
- you might find out how I got there in another post - it occurred to me that my old pen pal Meabh, with whom I still keep in good touch, thought highly of this establishment and assured me that it was " "the best pizzeria in Europe". That's a very big claim and seemed a bit exaggerated. However, as a true gourmet, I didn't miss the opportunity to take a look at this restaurant myself and see for myself whether it was a jewel of Italian cuisine.
In true German style, I entered the store just in time for the opening at 12 o'clock sharp. Since I had previously eaten a few partisseries - which I will also be reviewing - I wasn't too hungry, which is why I decided on the supreme discipline of Italian cuisine: Bruscetta! You may now be wondering why a simple piece of bread with tomatoes is so fundamental and elementary, especially for a gourmet with a refined tongue like yours truly. Well, that's because, based on countless visits to Tuscany and Sicily, I have a certain standard when it comes to tomatoes that not every establishment can match.
I was then presented with many key indications that Meabh might have been right. Because the restaurant filled up after just 6 minutes! After all the years I've been working as a gourmet, I've rarely seen something like this and it's a testament to the enormous quality and masterful skills of Mediterranean pizza makers.
After about 10 minutes I was handed the bread I had promised, of which I have also included a picture in this feature article. I immediately took a greedy bite and what can I say. It was one of the best bruscettas my taste buds have ever experienced - a perfect symphony of crusty bread, juicy tomatoes that tasted like pure sunshine and aromatic basil that took me back to my vacation in Tuscany. Refined by a delicate hint of exquisite Italian garlic, it made me think I was sitting in a modest Italian restaurant where Nonna herself was cooking. Simply heavenly! Peter Gustavsen is not easily impressed. But this pizzeria impressed me so brilliantly that I gave it 5 stars - an award that really means something. Only a few manage to reach this level. And thus:

A small queue seems a constant here, but that is a testament to its popularity, and there is a great reason for that. Proper thin crust pizza. Absolutely delicious. Good value and great food. Sit down or take-away. Take your pick. Highly recommend. Open lunch and dinner time. Central location 2 mins walk from main central thoroughfare in Galway.

Finally got to Dough Bros during the summer after being on my list for a very long time. Long queue, but for good reason. I’d happily drive from Armagh to Galway just for another one of those incredible pizzas. The base is on another level. 11/10

Tasty pizza and sides. Def worth a visit but if going with fussy kids keep the order plain and ask for no greenery. We had a lovely meal and very friendly team working. Note there is no table service so if you forget to order a drink or dip you will have to join the queue again.

If I could give this place 1 million stars I would. I was super impressed with the whole experience, the premises, their ordering system, their highly efficient staff & of course the food. I love their entire concept. They just do EVERYTHING right. Big shout to Greg who made our experience so memorable. Well done to the entire team, keep up the good work, ye are all brilliant at what ye do. I can't wait for my next visit.
