Full disclosure: There are only pictures of the desserts here because the cheese board was demolished in a silent, ecstatic frenzy before we could even think of grabbing a camera. Some things are just too sacred to wait for a photo.
...I specifically tracked this place down for my boyfriend, who loves cheese more than most things in this world. We walked in expecting a casual glass of red, but instead, we were initiated into Cheese Lovers Anonymous.
If you think you know cheese, prepare to have your worldview shattered by the owner. The level of care and attention he pours into hosting is second to none, he treats you like royalty from the moment you step through the door. He describes the cheeses with a poetic reverence that turns a simple meal into an absolute masterclass, all delivered with incredibly warm, funny, and genuinely stellar service.
The boards are absolute masterpieces, served at the perfect temperature. And just when we thought we were done, the Trieste Sweet Board arrived loaded with delicate macarons, mini cheesecakes, and flaky pastries that melted in the mouth.
Drop everything and go. Go for the phenomenal cheese, but stay for the legendary hospitality!

We were looking for a light meal and a Charcuterie/ Chessboard totally fit the bill we has a nice NZ Sauvignon Blanc and lovely conversation with the owner.

I cannot recommend Trieste enough! The food is always top quality and the wine is amazing. Barry and the team provide incredible service, especially with his knowledge of wine pairings with cheese. Always a 10/10 experience.

What a lovely little place, great ambiance, fabulous food and such a warm and friendly welcome from our host Barry.
We ordered the classic Trieste sharing board for 2 with a side of veggie sticks and hummus followed by the sweet Trieste board. The meats and cheeses were all wonderful and were perfectly complemented by the selection of little extras.
If we return to Galway, we’ll definitely be back, thank you 😊

The best, BEST wine bar full of delicious & delightful things. Barry is an absolute gem - super hospitable and full of colourful stories. Be sure to leave the car at home because you’ll be leaving very silly, giddy and wobbly.

On our recent visit to Galway, enjoyed an excellent afternoon at this quaint and delightful cafe. We were fortunate to arrive and get a table without a reservation. Our family enjoyed our late lunch after a busy morning, with gracious hospitality a bonus.

I am writing this review as a sip on my favourite wine from Trieste, the Vinho Verde.
We recently had a private party in Trieste and Barry could not have done anymore for us. The selection of food was excellent (and endless), the wine was crispy cold (my favourite) and the atmosphere was absolutely joyous.
Barry really knows his stuff and every single one of our guests absolutely loved the evening.
10/10 would recommend!

**This can fill you up if you're hungry**
My wife suggested Trieste so I glanced at the Google maps photos and agreed. Upon arrival I was starving and less than impressed about a charcuterie board for dinner. I have a healthy appetite.
Barry, the owner who is an absolutely lovely human, helped us navigate the menu to create the perfect combo of local cheeses, and accompanying wine and non-alcoholic beverages (0% Prosecco).
Once finished I was certainly full. But also extremely grateful for my wife's suggestion.
I cannot recommend this place enough.
